
Some things are worth repeating. Back in 2010 I wrote a post about my favorite salad and dressing. It still is, and since the vinaigrette is all about proportions, I decided to create a memory patch in its honor …

Since there were just two of us and I didn’t need leftovers, I squeezed just half a lemon. Counting that as one part, I added one part apple cider vinegar, three parts safflower oil and a generous dollop of Grey Poupon Dijon mustard, all chased by a three finger pinch of salt. And per Marti’s comment below, a squirt of agave nectar is also a good addition.
Yum!
And since I am a grandmother of boys, I have come to know the Under Armor logo on sight. Better yet, it was spotted not just at the dino park …
but also at Urban Air …

Wow you DO know that Under Armor logo!! Yay for Brave Jace…on two fronts: not letting the words of another stop him and pushing through when scared. Well done!

I have to admit that it took me a while to “get” the UA logo … and yeah, good on Jace for sticking with it (much helped, I’m sure, by the good example of his big brother)

If you ever forget the recipe – the perfect reminder! Visual reminders can sometimes work better than lists. I think as kids grow you get attuned to all the subtle shifts in fashion and ‘cool’ – this one will probably last a while tho!

Sometimes I add a tsp of honey to a very similar salad dressing…and sometimes all I want on salad is sea salt and a drizzle of olive oil plus some picked garden herbs.
Good for Jace, facing fear and a bully, is uplifting and I bet he felt terrific afterwards!

Thanks for the reminder Marti! I had quite forgotten that I like to add a bit of agave nectar, so I’ve updated the post accordingly.
I’ve also been known to squeeze a bit of lemon juice along with olive oil and sea salt on a simple arugula salad.
